The Ajvarski pepper is a sweet, heirloom variety originating from North Macedonia, renowned for its thick, fleshy walls and rich, smoky-sweet flavor. It is prized for making ajvar, a traditional Balkan relish made from roasted peppers and eggplants. The peppers are deep red when fully ripe and grow in large, conical shapes, measuring about 5 to 7 inches long. They thrive in warm, sunny climates and are typically harvested in late summer.
